Butter for greasing
450g lean braising steak, trimmed and cubed
Pinch of ground ginger
100ml beef stock (shopping list note – Knorr beef stock pots are safe)
Salt and pepper
Extra melted butter for sealing.
- Set the oven at 150 degrees. Combine beef cubes, ginger and stock in a casserole or ovenproof dish. Cover tightly with buttered greaseproof paper and foil.
- Bake for 3 ½ to 4 hours until the meat is very tender. Add it to a food processor with the butter and any juices remaining in the casserole and blend into a smooth paste – you may have to do this in portions depending on the size of your food processor.
- Add salt and pepper to taste
- Turn into small pots and cover with melted butter. When cool, refrigerate until the butter is firm.
