Potted beef

Butter for greasing

450g lean braising steak, trimmed and cubed

Pinch of ground ginger

100ml beef stock (shopping list note – Knorr beef stock pots are safe)

75g butter

Salt and pepper

Extra melted butter for sealing.

  1. Set the oven at 150 degrees. Combine beef cubes, ginger and stock in a casserole or ovenproof dish.  Cover tightly with buttered greaseproof paper and foil.
  2. Bake for 3 ½ to 4 hours until the meat is very tender. Add it to a food processor with the butter and any juices remaining in the casserole and blend into a smooth paste – you may have to do this in portions depending on the size of your food processor.
  3. Add salt and pepper to taste
  4. Turn into small pots and cover with melted butter. When cool, refrigerate until the butter is firm.
