100g – 300g safe breadcrumbs (either use some homemade bread, crumbled, or otherwise a safe shop-bought version)
1 tablespoon chopped fresh parsley
1 tablespoon of either chopped fresh rosemary, fresh thyme, chopped fresh chives or a combination, or 1 ½ teaspoons of the same herbs if dried.
OPTIONAL Grated rind of ½ a lemon – goes great with thyme
Salt and pepper
1 egg, beaten
Melt butter in a small saucepan and stir in the breadcrumbs, herbs and lemon rind. Add salt and pepper to taste. Stir in the beaten egg and enough water to bind the mixture into a soft paste. Bake either in balls or a bowl or use to stuff a turkey or chicken.
